The first time you start it, you will need to do a right-mouse button click on the ScummVM.app, select Open in the menu, and confirm you want to start the app. After that you can just open it as normal with a double-click.

[23:33] <grogbot> [discord] <criezy> I am not sure our last release for M1 works on Big Sur. I may have overlooked something and it is possible it requires Monterey. If that is the issue you can work around it by using the Intel version of the app instead:
